Zephyr Vegetarian Caf'e




There's a new Vegetarian cafe located in Long Beach, California. One of the local rags did a write-up and I paid them a visit. Frankly parking was a little tight in this down town LB area called the Artist District, where there are plenty of new lofts being constructed. Since I’m interested in both walking through lofts (hoping to afford one of these puppies sooner than later) killing to birds with one stone, by eating and prowling new models was a fine way to spend 90 minutes. Using phrases like “killing two birds with one stone” as a vegetarian----just bugs my subconscious. Anyhow I digressed, walking into the Zephyr cafĂ© was a bit concerning. The atmosphere is cold and sparse. Slowly I approached the counter in a manner in a totally uncommitted posture. Seeing a friendly, semi attractive young women with her warm smile comforted me and I committed to stay. I chose Teriyaki Vegetable and Tofu Bowl $7.25 and ice tea to sip. Taking a window seat to watch the world move by. The problem was the windows have strange soap like substance washed intentionally all over from ceiling to floor. I guess it’s there for a reason? I found it bothersome. A boy with a poker face served my meal and I enjoyed every last bite. There were many other things I wanted to check out on the generous selection, that I’d have to return soon. My hope is the staff and the room warm up a lot. So on my next visit I won’t need a blanket to keep my spirit warm while dinning. Oh and a window view would gain more value if I could really see out of it with out struggle. Other than tall the above mention---I liked it.

Easy 2 Put together for Dinner or Lunch




This tofu looks and the texture is like chicken. Firm Tofu, found in the fresh section of TJ's
Pour Veri Veri Teriyaki in a generous amount on top of the Tofu and bake for 25 minutes or until a bit semi brown

While that's cooking get a mixing brown a pour one or two cans of Cuban Black Beans into bowl
Use Fresh or canned Pineapple. It's important to cut the pineapple into tiny tiny pieces so that it just blends in with out even given an eyes notice to it.
Now bring in color and flavor with a red bell pepper that you've cut up into rather small cuts but not to small so they take the eye's attention.

Last is the bomb, Asparagus Risotto to be found in the frozen section. This can be microwave if you have to.

To in the final stretch, you put the Risotto on the plate. Next you spoon the Black bean/Pineapple/Red bell pepper on the rice
And top with a healthy amount of the baked Tofu baked in a Veri Veri Teriyaki sauce.

Fabulous Fajita Sandwich



Here is what you’ll need

Sourdough Bread or whatever bread your little heart desires
Cilantro Roasted Pecan Dip
Fajita Vegetables
Roasted Tomatoes
Soy Sliced Cheese
Balsamic Vinegar
Frying pan
Large bowl


Now lets build this puppy
(You may want to lightly toast your bread first)
Pour you serving amount of Fajita Vegetables into a bowl
Take ¼ of Roasted Tomatoes cut to small pieces and throw into your bowl containing the Fajita Vegetables
Take your bottle of Balsamic Vinegar and pour generously all over your Fajita and allow soaking for about 15 minutes or longer.
Take frying pan and splash garlic and olive oil
Toss the bowl of fajita and tomato into it on a low heat and simmer for about five to eight minutes

Take both sides of bread and smoother in Roasted Pecan Dip
Using a spoon with holes in it scoop out of pan your mix on to one of your bread sides
Now place two slices of soy cheese to cover the whole dang mess
Put your next side of bread on and put in over or under broiler to melt cheese and create the glue that holds this yummy meal together.

Tortellini with Creamy Vegetable Medley



Take a box of this Creamy Vegetable Medley pour amount that makes sense for the amount of servings your preparing. Keep in mind this will be poured on top of your pasta. Or better yet pour pasta into the sauce and make like soup with this taste concogtion.
Add one can of Coconut Milk or the right amount to the prepared servings.
One Tsb brown sugar
A bunch of Garlic
Salt and Pepper and a good amount of Cinnamon.

One Fabulous meal that is unlike any thing before it!
All products can be found at your local Trader Joes, hopefully

Brush this on your Tofurky vegi meal



Get a bowl and put:
Soy Sauce
Butter, garlic
Fresh squeezed lemon juice
Dijon mustard.

Put onto stove until all ingredients are melted together. Now brush this winning combo onto you Tofurky.

Put into oven for 45 minutes with the whole deal covered with foil. After 45 minutes of cooking remove cover and brush on a second splash of this concoction. Allow to brown for about 10 minutes. Keep your eye on it because this can burn if you’re not careful. Put foil back onto your Tofurky and 20 more minutes of cooking, bring the whole cooking time to 1 hour and 15 minutes is complete.
Your now ready to eat a very tasty holiday meal

Potato Salad With Apple chunks



Here in Camberland I've come up with a few Potato Salads. Here is but one of the fabulous dishes that await your palate!



Use one bag or two of Baby Dutch Yellow potatoes cooked for 15 minutes with a generous pour of Garlic Oil into the pot of water.



Now the secret weapon in this dish is as all ways Tzatziki Cucumber Dip used for the broad flavor it contributes, but it should be noted that this is used instead of any Mayo stuff. Us a whole container.



Get pre sliced black Olives use most of the can. But you must use your eyes and gut feeling to prepare any meal.

Now caramelized Onions by getting frying pan and using butter or a substitute melt the butter and a hand full of chopped onion. Until almost brown



A good shake or more of 21 Seasoning Salute. (It’s a must in every kitchen)

Now to mess with people cut up small fresh apples and slam them into the dish.



Salt and pepper. No kidding dude!
